Gougères
Ingredients
- Flour150g
- Water250ml
- EggsPreferably at room temperature5
- Butter100g
- Cheesegrated150g
- SaltAbout a teaspoon6g
Step 1
Bring the water too a boil with the butter added and the salt. Take it off the heat, put in the whole flour in one go and mix well with a wooden spoon. Put back on low heat and dry the mixture by stirring it for about a minute. This is done by stirring well to make sure that the dough does not cook or burn. The dough should detach itself from the sides of your saucepan. Let the dough cool slightly (it does not need to be at room temperature).
Step 2
Preheat the oven to 200ºC. Mix in the eggs on by one (vigorously). Make sure each egg is well incorporated before adding the next (This step is important!). Once all eggs are incorporated. Mix in the cheese.
Step 3
Put a piece of parchment paper on a sheet tray and use two spoons to create small speres of about 2-3 centimeters. Space them apart enough as they will grow in size. Put them in the oven for 25 minutes. Keep the oven closed until they are done. They should be very lightly browned when finished.
